Chef Chris Naylor’s one-Michelin-starred Restaurant Vermeer in Amsterdam has reopened in June 2016 after a thorough renovation. The cooking is top of the line and the service is high-level too, yet the restaurant’s atmosphere can be best described as casual.
Nature is the main source of inspiration for Chris and his cooking is based on the rhythm of the seasons. Ingredients are bought locally as much as possible and various vegetables and herbs have been grown in the garden on the rooftop of the accompanying NH Collection Hotel. Drinks before dinner can be enjoyed in the intimate, cosy bar that serves seasonal cocktails.
The restaurant offers a set menu. Guests only have to choose the number of courses. The menu is decided by the availability of ingredients delivered to Chris by his suppliers. Courses on the menu may, therefore, vary from day to day. All dietary requirements can, of course, be accomodated!
